I figured it made sense to make another of these for this year. Same as last time, post pics of your outdoor grilled goodies.

Heres last years thread

I added Titos and Xdisaster240sX's threads since they did them recently

now my grill has seen much better days. it functions, it's falling apart, you have to grill on foil, and it's possibly at least a decade old.

gross, right? here's the new one

i googled it while in the store and for the weekend griller, like myself, it'll be perfect. and it's not propane. one of the most common cons that i read was that the directions were poorly written. they were lying, took me a 6 pack to get in the right frame of mind to understand the method behind the author's madness. never mind the leftover pieces that i had to figure out where they went since the directions failed to mention anything about them. also, it says 2 people are required for installation, that was horse dookie.

i started to season it

you could hear all my neighbors shutting their doors to block the smoke now that it's good to go, time for a test grill

not the best steak i've grilled, but it was good. i just wish i knew i was buying a grill so that i could have marinated it overnight. ah well, there will be plenty of opportunities.

Alright...So I wa hungry and had this awesome idea. I had some seasoned left over chicken from that disaster dinner I attempted the other night and decided to make these. It was sooooo yummy in mys tummy :chuckle:
Cut up the left over chicken
Image
add some cheese, tortillas, a person who cant cook well and a oven and you got these
Image
sooooo good. I had to try them before they reached the table. Thats what us fat guys do I guess :yesnod

UH OH!

Tiger's in here making me look like a slacker (justifiably so)

Unfortunately, I haven't really started a lot of grilling this year yet. I did, however, cook a 12lb ham today, basted in sangria and pineapple juice. Delicious, but I didn't take any pictures. I will definitely grill something next weekend and get myself in this thread.

In the meantime, this isn't grilling, but here's some Mahi that I seared indoors in the cast iron a few weeks ago:

I've never had Mahi, but that looks amazingly delicious.

Recipe of the day: The Perfect corn on the cob.

Wash corn, leave husks on.
Place a pat of butter under the edge of one of the husks and fold back down.
Wrap in HD Aluminum foil, place on grill, and close lid.
Cook for about 15 minutes (approximate cook time based on heat of grill).
When corn is done, remove foil and peel off the husks.
When the corn is cooked this way, none of the strings of the husk will stick to the corn. (A huge pet peeve of mine) It strips clean.

Most of my stuff is super-simple but everything tastes really good. I used to love to grill when I lived back east, friends and I made weekend long events out of it. Fun times.

I bought the pictured fish frozen and it turned out just fine. It's very versatile. I know Whole Foods sells frozen Mahi of excellent quality, but you should be able to pick it up any number of places, or fresh potentially.

Just heat cast iron up really high, leave it dry, pat fish in oil and toss it in. Don't touch it until it releases on it's own, flip, repeat, then remove.

Fish is by FAR my favorite thing to BBQ. I think that I'll do some whole saba (mackerel) this weekend.

I usually keep salmon in the cast iron also, but it's great on the grill as well.

Mahi is my favorite fish to grill, fry, or make poki out of. Has the texture of tuna with the rich taste of salmon. Doesn't fall apart, marinades well...Love it.
Though I about OD'd on it while in Maui.
