my uncle hired me to do some tile work for him. i needed a new dry cutting wheel for my grinder to complete an odd cut on a couple of tiles, so i stop in at lowe's for one. i could have completely avoided this one section, but i decided to browse and see some prices, especially since they had some clearance sale this weekend. long story short, i bought a grill.

now my grill has seen much better days. it functions, it's falling apart, you have to grill on foil, and it's possibly at least a decade old.

gross, right? here's the new one

i googled it while in the store and for the weekend griller, like myself, it'll be perfect. and it's not propane. one of the most common cons that i read was that the directions were poorly written. they were lying, took me a 6 pack to get in the right frame of mind to understand the method behind the author's madness. never mind the leftover pieces that i had to figure out where they went since the directions failed to mention anything about them. also, it says 2 people are required for installation, that was horse dookie.

i started to season it

you could hear all my neighbors shutting their doors to block the smoke now that it's good to go, time for a test grill

not the best steak i've grilled, but it was good. i just wish i knew i was buying a grill so that i could have marinated it overnight. ah well, there will be plenty of opportunities.

Wait, what?

Can you explain what seasoning your grill is about? Also why people would close their windows?

the iron cooking grates came coated in veggie oil, as did the inside of the top and bottom parts of the barrel. you heat it up for a little bit and it makes it all last longer (less rusting). everyone closed doors and windows because it smoked, a lot, and there was a bit of a breeze carrying the smoke around the neighborhood. i had to run upstairs to close my back door as well.

Are those charcoal holding cylinder things really worth it? I was looking at some the other day... they never really listed the benefits of using one. Do the coals get hotter, faster? More even burn?

it's easier to get the charcoal going and it negates the need for lighter fluid. just shove some newspaper in the bottom and fill it with charcoal and you're good to go. i always have a steady supply of newspaper for burning purposes so it's way cheaper than having to keep getting lighter fluid.

I grill a lot of things, but steak isn't among them.

Steak is always better on cast iron. Either a skillet or a griddle, right on top of the grill or on a side burner. Heat it up to crazy levels, rub steak with oil and coarse salt, drop it on there and don't move it for 3 minutes, turn, repeat, finish in oven or on grill if desired. You'll get that heavy steakhouse char that is almost impossible to do a grill.

Cast iron griddle or pan will only be like $10, it will last forever if you know how to take care of it, and it will be the best culinary purchase you've ever made.

This makes me want to go home and grill though. Nice buy, btw. Looks good.

i rarely make steak, mostly just burgers, italian sausage, or hot dogs. my next outdoor cooking purchase will be a dutch oven. going to have to start foraging tag sales/flea markets for one.

^^You've got the right idea.

The older and more used cast iron cookware is (provided it's been maintained), the better. If you can get a dutch oven with 20 years of use/seasoning, you'll be that much happier with it.

exactly. my friend's mom taught us how to make all types of awesome food in a dutch oven. the one we used was really old but it was awesome. i'd be using it in the fire pit, most of the new ones i see don't look like they'd fare too well buried in hot coals.

+1 Nice grill and so true. I have a gas grill because of the speed/convenience but I miss the charcoal grill. Dang, now I'll have to root thru the garage and dig out the charcoal grill.

my friend said the same thing concerning the speed of a gas grill, but i don't grill enough to the point where charcoal is an inconvenience. if anything, i find running out of propane to be more of an inconvenience. it's 8pm, you have about 10 hungry people over, and you run out of propane. fill station is closed and all that's left if the grocery store and their blue rhino crap. i seriously have a 75% fail rate with their s***ty tanks.

and charcoal cooked food just tastes better. eventually i'll get the side attachment so the grill can double as a smoker

I've only used those charcoal stacks for Dutch Oven cooking. Like he said no lighter fluid but it makes it so all the coals are a uniform temperature.

Uniform briquet temperature is a good quality for sure.

This past week I have been "hot smoking" different things. It is just like grilling except with pieces of wood placed on top of the charcoal.

Exactly. Buy used cast iron cookware whenever you can. It's been pre-seasoned - sometimes for years!

I have two of the exact same grill as your old one in my back yard. They work well, not sure why I have two.

the old one still works decently, it's just seen better days. my father was trying to decide if we had it when we lived in new haven. if so, that outs it at least 15 years old.

My grill has seen better days, too. Specifically, it has seen days when it wasn't covered in snow.
