Get a good cast iron grill pan and do it on the stovetop.

Disable those smoke detectors first though.

Yea, I do have a very nice cast-iron skillet for meats. It's as close to a grill as I can get unfortunately.

I'd love to have a grill, but having to keep it out 15 feet from my door - in a place where anything NOT chained down gets stolen - I think not.

Salmon is one of the best healthiest protiens.
Cook it in parchment paper (en Papillote) for 40ish minutes @ 420. (30 wrapped 10-15 on the top rack exposed)

I cook it this way once a week typically. I love grilled on planks but this is so much easier.

I've got some steak prons for the purests out there. Although this was cooked inside on a cast iron (finished under the broiler). It took an hour to clean up and reseason but it was so worth it. Salt pepper and cumin ftw.

I am the apposite, I can't eat meat unless it is medium-rare to medium.
So for me, it is a big deal. Do you still lead a full filling life even though you can only eat rubber meat?

Time to put some of that to good use


Honey chipotle wings

and bacon pepperjack burgers

I dropped one of them sumbishes on the ground, luckily I had plenty :chuckle:

I cooked the bacon in the oven with franks red hot , fresh ground red and black pepper, and granulated garlic.

burgers were awesome. wings, delicioso. watching mark drop the burger onto the coals, retrieve it, rinse it off, then drop it on the ground en route to the grill was magical :chuckle:

Grilled the last TWO nights and took NO photos, I'm useless this year.

Doing it again tonight if it isnt raining, but oddly it's Mahi again, so it'll look pretty similar to what I already posted unless I actually grill rather than sear, which is unlikely.


I did a seared salmon last night with a dill/garlic butter, basic but good.

Did a little chicken last night and used it in a salad. Tomato, cucumber, avocado (I am an avocado fiend!), with my girlfriends deliciously simple dressing consisting of lime, oil, and a little salt. The chicken was marinated with a tomato basil, and garlic sauce. Came out great.

yes couscous. I try to eat as healthy as I can. I marinaded the pork chops in some lemon juice, salt and pepper, a little old bay, worsteshire (?) sauce, and dash of soy sauce and a dash of olive oil. I sauteed the green beans instead of steaming them. Did it in a little EVOO, some mushrooms and scalliions and almonds that I cooked with the meat and just let them simmer down. They were cunchy still. It was bomb. Just a little salty is all, but it was great. I know what to do next time.

I smacked an EVO VIII around today. I love doing that. Is it me, or do EVO's not run that well? Unless its one of the AMS cars or something with over 400 hp they dont run that well. Maybe Ive just run across some whack EVOs. Or my cars are faster than I think.
