This is my very first time BBQing by myself. I cant cook to save my life so I hope this isnt a catastrophe. So... I picked up some chicken and some grill mate packets.

It said I need to let the chicken sit in the mix for like an hour so thats what im doing now.

Its probably too late, but THIS^^^ is a biggie!! Refrigerate that bish!!! Let us know how it is though, that garlic wine stuff sounds amazing!!

Lol, you don't marinate things out in the open. Put them in the fridge along with the hot dogs.

And about the food poisoning, it won't be the hotdogs that will get him, it's the meat being left out in the open! The hot dogs are already cooked, lol.

Well...It took me over an hour to get the damn grill going and from there it went down hill.

Well, good try! Just use this experience to better prepare yourself for next time. Cooking a nice meal isn't any different than building a nice motor. Don't be afraid of cooking from one bad experience dude! Some suggestions from this experience:

For the chicken, poach (poke) it and set it in the marinade, cover tightly, and put in the fridge the morning of the day your going to grill.

For the mac and cheese, don't add quite so much water/milk as this time (regardless of what the package says, just remember how much you used this time,) and towards the end of the cooking down, cook it down/reduce the liquid with the lid off. Milk will make it creamier/richer than water.

For some great baked potatoes, poach the potatoes, roll them in EVOO (extra virgin olive oil), you can put some herbs on them if you want, then wrap them in foil, and either bake on the grill or pop in the over for about 400* for 40mins-hour depending on how hot your oven is since they vary. When they're done, let them cool for about 20 mins inside the foil, slice down the middle and add some fresh chives/bacon/sour cream/butter/lightly salt or whatever to taste.

:) You can make that an awesome meal dude, just try again!

No problem! Chicken dries out faster than other meats, so once you put that on the grill, you kinda of need to babysit it unless your slow cooking it for a long time.

Forgot to add that the EVOO on the taters will crisp the skin a bit, it's awesome!

Your gonna do great man, just take your time, plan it out before you start, get things ready (that's like 50% of cooking right there, prep is key to everything, and eventually becomes second nature!) and you'll eventually be the guy everyone HOPES will cook for them ;) Keep us posted!

Oh, and make sure the grill is hot (the temp you want to cook at) before you put the meat on it. Just like preheating an oven.

Great instructions Dano!!

When you roll the potatoes in EVOO I always then sprinkle them with some kosher salt that way the skin is already seasoned and delicious to eat.

Also get some GREEEEENS on that plate!!! haha Do some Asparagus but make sure the stalks are tiny tiny tiny. Although if you don't like asparagus or it scares you (hehe jk) just do some broccoli or fresh green beans sauteed in a pan in some EVOO and some S&P.

Try practicing with steak. It's much easier to cook than chicken as if it's a little undercooked, you don't have to worry about getting sick.

Just make sure to seer your steaks. Don't just cook them at a steady temp.

For good BBQ chicken, buy whole pieces with the skin still on. Don't marinate in anything - don't use those packs of seasonings. Just throw the pieces on the grill. Squirt BBQ sauce on top of them. Stick a thermometer into them after a while to make sure they're past the point of being salmonella sponges, but not too far after - this will make sure the chicken is still juicy! Too many people overcook chicken & it's all dry/tough. Take off the grill, throw on some fresh basil or oregano & enjoy!!!
