The breather tanks from greddy and sard are breather tanks, not really a swirl pots. The idea behind the breather tank is essentially to route the highest points of water in the motor where air bubbles can get stuck (ie. top of radiator, motor bleed valve, etc...) to a single high mounted tank. Then all the air bubbles will collect in the tank instead of being stuck in the motor.
Even if you were to completely bleed an engine of all the air in the cooling system, you will still develop air bubbles. This is because the engine will have hot spots and flash the water creating air in the system.
Also most swirl pots i've seen go on the upper radiator hose and the water will swirl through the little tank before going into the radiator. The swirling action brings any air bubbles in to the center top of the tank, which you can kind of see from the picture above. You then have a nipple on the center top of the swirl pot and direct the air bubbles to a breather tank to collect.
Also note that the breather tank must be higher than the engine and radiator. You also have to run a non-pressure cap on the radiator. This will allow the water to flow continuously to the breather tank.
