My first marriage ended because my wife at the time was cheating on me.

I am thankful every day that happened, because if not, I wouldn't have found my current wife who makes me so happy I feel almost ashamed of myself.

So why couldn't two people that love each other stay together without a legal contract between them?

Because, silly. No one can do anything unless a law tells them they have to.

When he is sober, he is fully functioning and is quite smart, TBH. However, as you can probably guess, those moments were few and far between.
