Tasty and healthy!!! that's what Im taking about....What sauce did you used in the chops ??? Looks delicious and I'm hooking this up Friday night. You have a special way with food, nicely done.

As much as I love to have the avocado sandwich or high calorie exotic food, I tried to be somewhat disciplined when it comes to eating,,,,

^^That looks good. I 2nd the question regarding the sauce.

Did you cook the chops separately or do it as a rack and then slice? I find that when I do it as a whole rack, I do a better job at getting them a nice medium-rare.

Here is my crack at it from about a year ago. Haven't done it since, but I might cook it for the inlaws this coming weekend when I visit them in NY. These were taken with my lame old camera, so the color isn't very vivid. If I do it again, I'm going to use my new DSLR, and so hopefully the beautiful pink color will actually come through this time.

My plating was AWFUL, lol. I'm not sure why I decided to do 3 chops per plate like some kind of wacky cult-like symbol.....bad decision. It looks kind of scary, but it was very good:

.

The lamb rack was frenched and pistachio-crusted, and then served with a potato rosti (i.e. hash brown cake), a carrot-ginger reduction sauce (very easy), deep-fried potato skin with white truffle oil, and rosemary cornbread muffins.

MOAR COOKING PICS!

^ your chops look great too!

and lol on the cult symbol!!! :D

regarding the sauce, i marinaded the chops, already cut, in soy sauce, chinese wine, pepper, garlic powder, and cumin powder. and i used the remaining marinade and added some water and corn starch to make it thick. and viola, thats the sauce

also, i pan fried the chops with non stick pan, so i used less oil. i dont like it being to rare, so mine are pretty done, but they are still pretty damn juicy and tender

Ohh, Le magnific!!!

Im cooking this meal for the family this weekend, I will put an extra twist on the chops by grilling them outside (charcoal grill). There is always a good excuse for grilling outside...

I've never had this, but I love maduros. It's like a Puerto Rican meat lasagna made with plantains?

That sounds hella awesome. I need to try this

I cook with plantains a lot (wife is Cuban-American, so duh), but I've never tried/seen this before.

LOL, I belong to a Facebook group called "I love Tostones". I probably make them at least every two weeks.

At dinner parties, I will serve them like blini, with toppings like:-trout roe and creme fraiche-smoked sturgeon and slivers of marinated beet-avocado and vaca frita (a cuban beef dish)

one of my favorite chinese dishes, lotus leaf rice.

i am gonna try to make that. you buy dried lotus leaf, then soften it up. put a layer of rice, then put your ingredients there, put a salted duck egg in there, put more rice on top, then wrap the leaf, tie it up, then steam it. yummy goodness!
