What can you cook in a crock pot?

No pics, but I made some amazing crock pot Chili last night before going to bed. It's very loosely based on another recipe I found, but 90% of it is my own creation. We had it for lunch today and it came out AWESOME.

Ingredients:

1-1.25lbs of Ground Beef
1 Carol Shelby Chili Kit(Or your personal favorite)
3 Cups of Water
1 Can Tomato Sauce
1 Can Diced Chili Tomatoes
1 Whole Tomato
4 Green Onions
2 Stalks of Celery
1 small(whatever the smallest is, I can't remember the size) can of Diced Green Chilis
1 Tbsp of Minced Garlic
1 Tsp of Basil, Oregano, and Parsley(equal amounts of each)

Brown the hamburger meat in a skillet and season to taste. I personally use Seasoned Salt and McCormick Hamburger Seasoning.

Combine all ingredients above into slow cooker, also dicing up the whole tomato, celery stalks, and the green onions. *If you use the Carol Shelby Chili Kit, use all of the spice pack, half of the salt pack, and half of the cayenne pepper.

Add ground beef to ingredients in slow cooker and allow to cook on low for 8 hours. I serve it with sour cream, shredded cheese, and oyster crackers(all optional).

Homemade Beef Stew:

Breakfast steak (or any red meat you have on hand - except ground beef)
Potatoes - about 2 per person cut into bite size pieces
Carrots - about 2 regular sized carrots cut into discs
Onion - 1 whole one chopped
Celery - chopped into bite size pieces
Beef Stew seasoning packet
Worcestershire Sauce
A-1
Olive Oil
Butter

1) saute a few onions in a skillet with some olive oil and a splash of Worcestershire
2) seer your meat just for a few seconds in said skillet; no more than a minute on each side (this helps create another layer of flavor)
3) Dice vegetables and layer them in the crockpot.
4) Place meat on top of vegetables. Make sure the sauteed onions go in the crockpot too.
5) Put enough water in it to completely cover the meat. Pour in a little more Worcestershire and some A-1. A tablespoon of each should be good.
6) Put a tab of butter on the top of everything and cover it.
7) Set to cook on low for 8 hours.
8) Don't mess with it a lot. The less you stir it in the beginning, the better it is.

**Make sure you cook this on LOW if you aren't gonna be home to watch it because the potatoes WILL stick.**
The A-1 and the Worcestershire really give it an extra kick that makes an amazing difference. A little goes a long way so don't go too crazy with it. Also, learn to make your own Beef Stew seasoning. The two main ingredients of the store-bought packaged seasoning is salt and sugar.**

- You'll notice that there are no definitive measurements in this recipe. I'm from the South. We don't measure ingredients unless we are baking. You can adjust the amount of beef and vegetables you put in it based on your family size and their favorite vegetables. -

This is excellent served with crackers or a pan of cornbread. It is also much better if it sits to the next day. That almost never happens but it is delicious.

Awesome recipe! But it really adds more flavor if you use large chopped chilis instead. Using chopped tomatoes also really helps...

I'll try that next time. I used a couple of small fresh chopped tomatoes this time, but I hadn't tried it before.

The other day I made a roast with the intention of making openfaced roast beef sammiches.

3lb rump roast
1 bottle of Hoegaarden
1 (hoegaarden) bottle of water
1/2 can coke
1/2 onion finely diced
1 can of sliced mushrooms, diced to about the same size as the onions
Had 3 small green bell peppers from the garden that I cut the tops off and deseeded to throw in.
seasoned with salt, pepper, garlic powder, paprika and 3 medium sized bay leaves

Cooked on low for 10 hours (my average workday)
Placed the roast into a pan to shred (pretty much fell apart anyways) removed the bay leaves and threw away. Removed the peppers and set aside. Used the broth/onion/mushroom stock to make gravy and whipped up some mashed potatoes. Butterfly a sammich and the potatoes, drown in gravy and enjoy.
