I have an Xcessive Manufacturing intake manifold and it doesn't seem to have anything for the routing of the PCV system. Anyone run into this problem?

simple run a line from the pcv box to the intake(obviously you want something to trap the crud along this line) with a one way check valve.

what type of fitting should i use on the intake manifold? i mean all the fittings i see have that super small inlet which isn't really going to let anything collect but instead probably cause blockage

I think he was talking about connecting it to the actual intake tube, not the intake manifold.

This is a fairly big argument of debate, and lots of people do the pcv system differently.

I think the way the stock system works is fine. That is: PCV hose hooked up to the intake manifold, valve cover breather hooked up to turbo intake but after mafs. This system pulls a slight vacuum on the crankcase out of boost, and allows it to vent into the intake while in boost.

You don't want to get oil fumes on your mafs element! Some people claim the pcv will allow boost to pass it and pressurize the crankcase. I tested my pcv valve with an air compressor and it held enough pressure to balloon a vacuum hose. If you are running blow through, post back up and i'll make a recomendation.
