In all seriousness though I'm interested to hear your thoughts on why not to use a thermostat to control oil flow to the cooler. I'm just worried about causing premature wear driving the car on cold days with the oil not getting up to operating temp.

i think what if the thermostat goes bad, and you have no oil pumping? much like the water thermostat causes you to over heat.

Oil takes a little longer to heat up, but much longer to cool. As oil gets hotter it also thins and pressure goes down. I don't use an oil thermostat because by the time my coolant reaches 170 at the heads my oil is at 150. The thermostat opens and water temp is now lowered to about 160 then climbs to 175-200. After running it 5-10 min minutes the oil sits at 170 and stays about there. Now if I lived in Canada where temps were very very low I would probably use one, but its not the case. I just choose not to use one, its not required, and they can also restrict oil flow when the thermostat begins to open and close.
