Noob questions on z32 brake and offsets

Hello guys, I seriously need some help on my brake upgrades.I'm going to list all the things I'm going to buy for z32 brake upgrade, and can you guys please point out the mistakes or what is missing?

I'm going to get 30mm z32 front brake calipers, SS brake lines. 5 lug conversion for front and rear. 5 lug rotors for front and rear. new master brake cylinder(are there abs and non abs?) Keep stock rear brake caliper(would it fit on the new rotors?) 4x used rims(still lookin) thats big enough. 16inch + right?

Can someone explain to me what offset is? If a set of rims have offset, do I need to buy addittional parts to install it?

Am also looking to buy all the parts I listed above. Thankyou for all your help.
