You can't compare tuning an Evo or Sti with tuning the M/G/Z. The power that you can gain from cranking up the boost, advance the timing to ultimately get the best AFR for your Evo will make so much more POWWAAAH than the NA-VQ engine.
I think it boils down to the tuner. Ultimately, what you're trying to accomplish on the dyno is the same as doing pull on the street. You're trying to capture the data and analyze it. Once you know what it's telling you, you can tweak it for best performance of that car. Of course, it's much safer to do pull on the dyno then on the street for obvious reason.
Having your car tune on a dyno from a reputable shop is the best way as you know they will stand behind their work. Of course there are shops who will use your car as a test mule as the tuners are so new to the technology. For instance, there's a shop about 1.5hr away from me that will charge me a good 600 bucks just to flash a standard map that he developed for other NA-VQ engine without having anytime on the dyno. If i want dyno, I have to pay more.
Bottom line - if you're close to a shop that doesn't charge an arm and a leg for a dyno tune, then go for it. Of course, make sure this shop has a tuner that knows what s/he's doing. If you're like me, you're going to have to do the next best thing, leveraging tuner that other have good experience with to tune your car.
