We have a forum specifically for these kinda questions. The gurus in there are very keen to wheels and tires, they can likely hook you up with what you need to know. I am gonna move your thread to that forum.

A nice 17x8 +20 will work great. You can find a lot of wheels that fit the mid-late model mustangs that will be in that range of fitments.

if you want 18" get at least a 18x8.5" to get some decne tload index under your heavy car. A 245-40-18 should work just fine on that wheel. +15-20mm offset should clear, but test fit without a tire to make sure.
