Like others have said, definitely get a thermostat for the oil cooler.
Cold oil is bad, very bad....the problem is that the vast majority of people never let their car warm up sufficiently before putting it under a lot of load/stress...so especially if you don't have an oil temperature gauge, if you install an oil cooler w/o a thermostat and give your car the same time to "warm up" before you start stepping on it as you did w/o the oil cooler, the engine oil obviously won't be as warm because of the oil cooler, especially if it's an efficient one. All the thermostat does is bypass the oil cooler so the engine warms up the same as it used to, and then opens the thermostat when the oil is hot enough, usually around 190-195 deg F. They make a pretty big difference, especially if you're turbocharged. I would never dream of turbocharging w/o adding an oil cooler...after long hot runs, the difference between the inlet and the outlet of the oil cooler is pretty amazing. They're a damn good idea and I don't know why people with even a lot of mods and lots of boost don't have them....
Also, a word to the wise: if you are installing one and are sourcing your own hose, MAKE SURE IT'S HIGH QUALITY, HIGH TEMP, HIGH PRESSURE hose...don't cheap out on the hose. trust me on this, I almost destroyed my engine due to oil starvation by using cheap hose for the oil cooler...even though this hose was rated for higher temps than the oil would ever get and higher pressure than the oil would ever be, they still failed...
