1) Alright, You may have read my thread before that i got z32 calipers for my bday, now theyre suppose to be from a Turbo Z32. But what if theyre not, maybe my gf got N/A Z32 calipers, How do I tell if its 26mm or 30mm? I dont wanna get the wrong rotors.

2) These calipers came with some regular after market crap brakes (new), Should I get Project U pads or will the regular ones work for now?

The stock pads should be ok for now. If you have a problem with overheating them, then I would start to look for different pads.

As far as how to tell which calipers they are, there should be a part number on the box, just have the people at the parts store double check it. The 26mm only came in one year though and that was 1990. So more than likely you have 30mm.
