I'm working through removing my wiring harness from my KA24E, and I'm looking to swap a 350 SBC I have. Main question I have is what all of this wiring needs to be removed to get the unnecessary KA/Trans stuff out of the way but maintain the use of the headlights, radio, locks, etc.

No, I don't want to spend my money and do an LS swap, nor do I want to swap a CA/SR/RB/KA-T motor in. :rotfl

Flame me up, Scotty!

Disconnect the harness from the engine, all of that can go away. Leave the rest. Is the new motor going to efi or carbed?

Plan is to go carb'd. I know carb'd motors pretty well vs all this wiring and tuning with the ECU/PCM/etc.

The new EFI bolt on stuff is so good and pretty affordable these days. Self tuning. Check this kit out, it's complete and bolts on like a carb. $995

Carbs are so outdated even Nascar got rid of them. And Unless you have a fully built to how you want it 350sbc laying around, a SR20DET swap will be easier and cheaper.

I'll second this. The harness around the engine is one assembly and can be tossed. There is another harness assembly that goes around the transmission, starter and alternator and that could go as well, but keep it around, in case you need to separate the trans stuff from the starter and alternator stuff (but I think you're new engine and transmission will have all of it's own stuff like that).
