We just rebuilt the engine in my 240SX. There are 2 wires coming out of the injector wire harness. They are black wires with eyelets at the end. One of them is hot and the other is not. The wires are next to the front part of the head on the passenger side. When you touch the two wires together, there is a clicking sound in the manifold.

Also, when we went to start the car, the fuel pump does not seem to be pumping gas. There is power on 2 of the wires going into the pump. The pump does not seem to be making any noise, so we can't tell if it is working. Is there a way to test the pump?

If you are getting fuel to the engine, then it works.

Check your fuel pressure..... I suppose the very easiest and most rudimentary way to do this is to squeeze the fuel hose and then have someone turn the key on (dont start the engine) and see if the hose gets harder...

Those are ground wires. Neither of them should be hot. They are supposed to be bolted to the head, which is why they have eyelets. There should be a 10mm bolt close-by on the head.
