....for now I plan on leaving my ride at stock height but I just want to buy some rims to close some of that disgusting gap between the wheel and the fender. How can I do that without dipping into the technicalities of wheel camber, rubbing etc......? Thanks!

Only way to eliminate wheel gap is to lower or bigger overall tire diamater.
