By no means will going to a higher offset increase your caliper/spoke clearance. Higher offsets move the wheel in and depending on spoke design, reduces the caliper clearance.
You actually want to reduce the offset if your goal is to get rid of the spacers. Adding spacers (like you have currently) reduces the effective offset - so if your current rims are 18x8 +35 and you added 10mm spacers, your effective offset would be +25.
Anyways, I personally would stay around +35 to +40 offsets for rims that are 8.5" wide. This *should* give you enough clearance for bbks, assuming the rim's designers do not have their heads up their rears. I would recommend test-fitting using a template if possible. Or like Spawn said, look for rims that fit the g37 or 370z sport packages.
