Sounds like you have are grasping the basic concept. You can fit a couple different tire sizes on a given rim. The tire you choose depends on what you are looking to do. Check out this website:
http://www.rimsntires.com/specspro.jsp it will give you an idea of how varying the tire size will change the look of the tire on the rim as well as how it will impact things like speedometer accuracy.
You should not have any issues with rubbing with an 18x8.5 +25 rim regardless of tire size. I'd recommend a 235/35/18 if you want a low pro tire look. Do a google search, there are a million pictures that show what a 35 sidewall looks like on an 18" rim.
