Wheel details: 18x8 +40 all around, 225x40R18 in the front and 255x40R18 in the rear. The car is lowered on coilovers. The fenders are completely stock. So the question is what spacer should I use to get the wheels to fit reasonably flush?

You should really just take a measure tape or rule & measure it yourself... depending on camber, the actual amount of lowering, whether or not you have/will roll your fenders, spacer could be anywhere between 20-50mm to sit "flush".

or

Get a new set of rims...

That's the way they came and were mounted on Touge_Drifter's car. He had them on there with +5 spacers and they fit his pretty well.
