I would definitely mate both exhaust manifolds at the turbo or run a twin turbo setup. Doing a turbo off of one side is somewhat rare and probably wouldn't work quite as good.
As far as turbo size it really depends on what kind of power levels you're looking for and how much you're wanting to spend. I really like the GT3076R as that compressor matches up with a lot of engines due a pretty nice compressor map. Some of the VQ guys I've talked with say just to go with the GT35 as the spool isn't too different and it'll support a little more power.
For a very cheap alternative to the two, the T3/T04E 50 trim is pretty similar to the 3076 and the Holset HX35 is actually a little more superior to the GT35 as far as flow and efficiency goes, in my opinion. The HX35 can support nearly 600 hp and can be found easily for less than $400 on ebay in good condition.
As far is internals, I know of a Maxima guy that was pushing over 500 whp I believe, but he went through a few engines to get to that goal. I'd say that would probably be the upper limit on the stock internals but only if you're tuning is spot on. Without good tuning, you can kill an engine at half that power so be sure to invest a good portion of your project money into a solid fuel system.
