The MAF could definitely cause some of the problems you mention. Fortunately, it is easily cleaned or replaced, although a new MAF is rather expensive. Go to your local auto parts store and get a can of MAF cleaner (get that specifically, as other cleaners could cause damage to the sensor), give it a good cleaning and see what happens. It is fairly easy to do, one wire harness and a few screws and you got the thing off. Take it off with the tube attached and be careful not to touch the sensor as it is easily damaged (if you leave the tube on it you have to work really hard to touch it so no real worry). If that does not solve your problem, it is likely not the MAF, or you may need to replace it. Either way, it is probably a good idea to give it a good cleaning anyway.
As to the O2 sensors, I have had those codes off and on for a few years now and have done nothing with them. I have not found that it has much effect on how my truck rides, they are not real high performance machines anyway. Also, I cannot see how the sensor performance could possibly be tied to the rattle and shaking you are mentioning. A little hands on shaking and moving under the hood may help discover that culprit.
