Weird overheating?

So my 2003 MT6 was overheating for a while and even boiling over so I replaced the thermostat and that seemed to solve the problem...now this morning as I was driving I noticed the temp rising up but the engine was not hot nor did the coolant start to boil up. Turned on the heat and cold air was just blowing out... Then I would start to drive a little more and it would even out and then blow warm/hot air. If any one has any helpful advice on this problem I would greatly appreciate it!

Sounds like vapor lock...air in the system. Feel / squeeze the upper radiator hose to be sure coolant is moving through the system. The VQ's are notorious for being difficult to replace coolant without creating air pockets. Lot's of elaborate DIY's on the G35Driver site.

check the FSM in the FAQ for burping method. You have to do this when replacing your coolant and might help you with your issue.
