weird heat issue or is it heat issue at all???? electric spikes and eveything

ok guys i have a nissan 240 sx 1195 with a sr20det swap greddy fmic gt28r turbo, megan racing headers and down pipe. dont know if any of that will help anwser my question so im listing what i have. ok no for the question, Everytime i drive my car its ice cold from the moment i turn it on (of course) and then warms up like it should. but after a while of driving i notice that the water temp rises mostly while im driving on the highway it rises. but when i get off a off ramp and start down shifting it quickly drops in tempature almost back to normal. but also a weird thing is that when ever i turn my fan on for my heat from off to 5 the needle spike up really quick too. now i have replaced the thermostat with nismo, but no help. im kinda lost. i did upgrade turbo from stock to the gt28r but it was doing this before i did the upgrade, im still using stock injectors too. would the engine not getting enough fuel make it run hot???? I need some suggestions please. oh and i also have a switch inside the car to turn on/off 2 fanson the radiator and i do have a koyo radiator too. I hope it might just be electrical issuse cause it spikes and tempature cant read that fast. is there somewhere i can take the car and i can hook up a device to see if the needle is reading the correct tempature??? thanks you for all the anwsers and suggestions, and sorry for so long of question.

gt28rs on stock injectors with more boost? If so, real bad idea. yes running lean will cause your engine temps to skyrocket.

no im still running stock boost. I have the new 740cc injectors i just need to get the maf which i just ordered and then get my ecu chipped, but at least i know that maybe i am running lean, do you think that it is possible??

A lean mixture is a possibility but for the motor to overheat that quickly, the mixture would have to be extremely lean; there would be other drivability problems with a super lean condition.

The problem does seem to point to electrical. Install a temporary mechanical temperature gauge to check the coolant temperature.

just to add when i switch the window switches the heat rises instantly also, and everytime that i down shift after getting off the highway and get to high rpm the temp goes down then rises back up again. If this is a electric isse who should i take a 240sx with sr20det swap to in maryland area???

sounds like its electrical to me, at least from the way you describe it.

Make sure you have plenty of grounds, and check the wiring anywhere that you may have installed anything. Then if you dont figure it out, just go over everything really carefully to make sure the harness isnt damaged somewhere.
