Water temp help on 92 hardbody

I just purchased a 92 hardbody and the mech / clutch fan was bad. So instead of getting a new one, i just slapped in a set of dual 12's i had laying around. Now i know the mech fan spins all the time keeping the motor as cool as possible but i have no clue on what the water temps looked like with that fan working.. I went out and purchased an autometer water temp gauge and dropped the sensor into the upper radiator hose and got me an adj thermostat to kick the fans on at X temp, but i have no idea where to kick them on at... since this motor came with a stock mech fan and no a/c fan...

What do u guys recommend..??
