I wish I saw this thread before going through the process of bypassing the motion lockout. I was ready to document my process but seeing as this thread exists, I'll be brief. To clarify, this bypasses the DVD restrictions, USB restrictions, AV input restrictions, and navigation input restrictions.
I have a 2013 Nissan Pathfinder Platinum /w Bose but no rear entertainment. The PDF's below were crucial.

I'll first start by saying the connector with the wires you need are connected to the AV control unit, not the screen. The AV control unit is located just below the screen. For the platinum trim, the PDF file AV.pdf on page 410 lists the connector configuration. (If you have a different trim, your connector will be on an earlier page of this PDF) The parking brake wire (dark green) and the vehicle speed wire (grey) are pins 53 and 70 respectively. The diagram states beige for the speed wire but it was grey in my case. If you don't ground the speed wire, your video will cut out over 5 mph.
I used this Youtube video to remove the head unit and associated panels.
https://www.youtube.com/watch?v=6sKmrP55x6k The lower controls must also be removed by pulling out and up. After pulling it straight out a little I pushed in 2 tabs on the bottom then lifted the unit up.
I also used PDF IP.pdf on page 25 to learn how to remove the drivers side lower instrument panel. It was a major pain. PWO.pdf on page 33 described how to remove the AC 120V outlet switch which helped for removal of the blank switch where I added my new switch.
You should use a DPDT switch to ground the parking brake and vehicle speed wire. This allows you to resume normal functionality or switch on the bypass. When grounding the speed wire, your navigation will not function. I grounded these wires to a screw next to the switches. It is wise to use a multimeter throughout the process to verify continuity. (Test ohms) My first switch went bad on me and if not done right your splices may end up loose.
The switch I used was purchased off Amazon. It did require me to sand the sides down but no adhesive/glue to keep it in place. To keep it brief, the switches push out of the front of the switch panel but behind the front facing panel.
