It really has little to do with demand, luxury cars simply do not hold value because the leap in technology between model years is so high. Cheaper cars like the Pathfinder have much less in the way of creature comforts to begin with - and even though the LE has pretty much everything the Qx4 has, it doesn't have the Infiniti badge. In general you subtract 50% of the value of a luxury car within the first year, regardless of usage or condition. BMW is a great example of this; a excellent condition 1998 740 iL can be purchased for 8,000 dollars, even with low miles they don't go over 10k, and they were a 60 thousand dollar car at the time. My friend in high school bought one for under 8k that was a chauffeured car and it was nicer than most new cars - feet rests, cigar lighter, amazingly comfortable seats, etc. You compare it to the new 7 series and it's like a toy, even though the older model looks hella better.
Back on topic: Why the hell would you ever buy a 2wd suv?
