Vq35de strange cooling issue?

Hi all,
So I have a cooling problem with the vq35de in our 2011 Nissan Quest (I know wrong section but I want info from folks that know). The quest has a vq35de that started running hot after extended highway trips. The thing that has me stumped is that the temp will come back down into normal range fairly rapidly if I floor it and run it at high rpm for around 15 seconds or so. It is not related to the AC running or not, and doesn't seem to happen at lower around town speeds. This has me thinking that possibly I am having a water pump/circulation issue? I thought I would see if anyone else has experienced anything similar with their vq35??? Any thoughts are welcome.

I own a dealership and service shop so tools and general knowledge aren't an issue, but I haven't run into anything quite like this with a vq engine and would love some advice from those more knowledgeable than myself in regards to these engines.

Follow the troubleshooting steps in the FSM

If it has two fans are they both running?
Thermostat?
Sensors?
Belt?
Radiator Cap?
Coolent?
