Will be going twin turbo once the engine is in 300zx chassis running n/a but havent found any info on the oil feed locations

Welcome to NICO!
I think most people put a tee on the oil pressure switch/sending unit with a needle valve to control flow. That's probably the most convenient place to do it.
As far as coolant, probably the easiest would be the heater ports on the back of the engine.
