I was just wondernig if anyone can shed any insight on whether to drive in normal conditions with the vdc on or off. And does it make an impact on the mpg. Thanks

IIRC, VDC shold stay ON unless you are stuck or need to engage the AWD lock for "off-roading" where you may want tire spin. The VDC automatically turns back on over a certain speed or when you re-start the engine.

The VDC OFF just lets the tires spin (only up to a recommended MPH) to assist in special situations. Tire spin is good offroading, not good on-roading....VDC controls that issue.

The VDC will have ZERO effect on mileage as it's only active when the vehicle is sliding/slipping. IMHO it's a good thing to leave on all the time. As RubenTheRogue mentioned, dectivating the VDC is only useful to get unstuck in snow/mud as it will allow the tires to spin more freely without the traction control component of the VDC kicking in.
