If the head will be off it, then have the flashing removed from the coolant channels. anything related to maintenance such as timing belts (go for one of the high-mileage belts), water pump, oil pump if necessary, plugs, thermostat, etc.
If you're going to do the clutch, you might as well do the flywheel and the rear main seal while you're in there (or atleast have the old one machined if its in moderatly good shape). All the things that are easier to change while the parts are already accessible or while the motor is out of the car are good to change due to the decreased/negligent additional labour costs -- especially if you're going to be submitting them to extra stress.
