Are there any telltale signs that AWD fluid is low or needs replacing? The dealer wanted to "service the transfer case" around 70K (now @ 75), even though it would have been done at 60K, and the interval is every 30K. What should this cost?

Second part: is there a PCV valve people recommend?

The transfer case should be a simple (well, depending on access of the fill and drain plugs) drain and fill of the fluid. Not sure how much this will cost, I'd imagine it depends on the specific dealer. My local Nissan dealer would probably charge $25 + disposal fees, tax, etc. if I supplied my own fluid. You can DIY if you'd like, page MA-32 of the factory service manual has details.

Use an OEM PCV valve only, I've read of horror stories of aftermarket PCV valves causing more oil consumption, early failure, etc...

To be clear, I'm not going to have the dealer do any of this. Last oil change I had them inspect it. They wanted over $100 for the PCV change alone.. I'm not really a DIY guy and I don't have a space to work on it, so the plan is to buy the parts and go to a reasonable mechanic.
