so i performed a auto-manual swap about 3 months ago and i just now realized that the plug on the bottom of the transmission was loose, letting the transmission oil go to the wind. Now just so you know, the car has not been running because i am rebuilding it, so i dont know how much fluid has drained... my question is, how do i know how much is left? i want to add more fluid, but i dont know how much it needs.

Take out the fill plug, take your shifter out, pour oil in till it comes out of the fill hole and put the plug back in.

Yeah, and thats how you add the right amount of trans fluid. Same way for the diff. take the fill plug out of the side of the trans, fill from the shifter hole since its easier to get to, when fluid starts coming out of the fill hole plug it up and your done. You wont overfill it if you do it this way. Its basically the only way to really do it.

Laynlow is correct. Make sure the car is level. Fill it either from up top or the fill port until it starts to come out the fill hole. when it stops coming out put the plug back in the fill hole, tighten and you're done.
