The oil change guys say I have way too much coolant in the mix and is strongly advising a fluid changeout. I will admit to driving it for two years with whatever is in it and I like that the car never overheats. Is this a terrible thing? Any net effect on CTS and/or engine performance?

A 50/50 mix is ideal. Using an antifreeze tester, it should show somewhere around -30 degrees F protection.

More antifreeze means less cooling capacity - not more. If I were you I would flush it and replace it with a 50/50 mix simply because you haven't yet since you've owned the car.
