Hi i recently had a blowout on one of my tires and I am in the process of getting new tires (same model, Continental DWS from TR). I am concerned however, that the tread depth might be a little different. Does this matter? What are the max tread height difference can there be? I do have a 2008 G35x and I did a quick search on tread depth in the pdf manual and there was nothing.

I had previously gotten these as a 4 piece set back in 2013 and I probably put in 10k miles MAX. Any help is appreciated!

Great question. You'll want to replace two (same axle). With only 10k miles, the wear should even out across front/rear, and you'll be pretty close to replacing them all at the same time down the road.

You'll also have one gently-used good tire in the event of another blowout - Pack it in a plastic bag and store it someplace that won't see extreme temperatures.
