ok... my question is when taking off the vrank belt pulley how do you keep the cam gears from spinning?

there are tools to lock the cam gear in place, when I did my z31 I just set it at TDC and slowly pulled the belt off one side at a time and let the cam slowly rotate to rest, only the drivers side wants to move at this point if I recall

can i turn all the gears to the right spots if they move once the belts off

if they are only a few teeth off yes, you can't make a full rotation and I'd suggest turning the cams only and not the crank, you can bent valves
