I have a 1990 nissan z32 gs non turbo. I am about to put in a water pump and timing belt. My question is, do i have to lock my cams from turning or can i just let them be? I have decent skill with a wrench but mostly old school motors, not used to tuner engine's, not sure if cams will free turn once i pull belt?

Just set the engine on cyl #1 TDC. Then remove the belt. Everything will stay where they are

Those passenger side cams like to swing out of place if touched wrong. Its not a big deal though, just line the marks back up on the sprocket and the timing belt back plate.

When you are done and think you have the belt on correctly COUNT THE TEETH! Save yourself a lot of potential headaches and just do it. It takes like another 10 minutes.
