You dont have to run them but they will extend the life of your turbo.

Having a water cooled turbo eliminates heat-soak, which cakes the oil in your turbo and will cause poor lubrication. Eventually it will eat your bearings due to oil starvation. Letting your turbo cool off for a while with a turbo timer or just leaving your car running after you drive stops this for the most part though.

Also for extended highway driving a water cooled turbo is recommended, it keeps your IAT's lower, and your turbo cooler.

I dont really understand about your car running a bit hotter. This happend after you installed your turbo kit? That doesnt really make any sense. If it only raised it a little bit you dont have anything to worry about. You might have a few rails in your radiator stoped up or something.
