Temp gauge Problem!!!!

Its a '91 ka24de. The problem is that the temp gauge is ****ing with my mind!!! i will start the car. let it warm up for a min. or 2. then be driving around for a little bit (roughly 5- mins.) the temp gauge comes up to the first line.( i have C, Line, Line, 2red lines.) then it will move up to the 2nd line. (this not being nuclear meltdown hot). then it will come back down to the 1st line. then shoot up to the 1st red line then come down to the 1st line again. im not really beating the car. maybe shifting at 2500-3000 rpm every shift. i live near the city but its not light after light after light. mostly 35-40mph roads, some 25mph side/residential roads. i just got back from the beach... 70-80 the whole way down. like 2+ hrs of this didn't really get up past the 2nd line. i just installed a 11in. fan that i have a switch on not connected to the thermostat. i always have it on. i took the white engine fan off. flushed and bled system. i need some help!!!
