Check your thermostat (or check to see if there is one in there)

I have the same problem. After my radiator blew, I replaced the radiator and hoses and bled the system. I then noticed irregular temp problems, the car does fine until warm, then proceeds to spit coolant into the overfill causing the temp gauge to vary from cold to almost hot and changes during acceleration. It doesn't overheat, just kind of boils. The lower radiator hose doesn't get real warm, so I replaced the thermostat. Still doing the same thing. Does anyone know how to fix this? I was thinking maybe the water pump (the only part I haven't replaced), but normally water pumps leak, not restrict flow. Any help would be greatly appreciated. Thanks!

for those of you that see an imedate dump on your gauge when accel. check your connection of the single wire on the water inlet to the engine. either the lug on the sender is loose or the connection is corroded. the reason you only see it jump when accelerating is the wind speed from the fan it blows back on it breaking the connection.

daily driver yours is an over heat problem. most likely due to an air pocket in the system. you need to get the front end of the car up as high as possible to blead the air pocket out. use of a coolant funnel is the best way to purge your system of air.

Thanks NISTECH, I will try and elevate the front of the vehicle and purge the air. I had a feeling there was still air in the system, but wasn't sure. I've tried running it and bleeding it several times now.
