Temp gauge flutters

My water temp gauge in my 95 240sx se flutters whenever I accelerate or get on the throttle at all...well actually, it pretty much drops down to cold. Why does it do this? Can I fix it or do I need a new one? I can only read my water temp if I'm idling or cruising, which sucks.

all other gauges ok? i would put a meter on the temp sensor to isolate the circuit. to do this..unplug single wire sensorinstalled multimeter leads to ground and sensor terminalset for resistance measurementoperate under conditions that would cause the problem
