I wish I could have gottn on here sooner. The reason that bleeding it helped out is because some of the thermostats that people use do not have the little bleeder "button" on the top if it. The Nismo, and nissna replacement ones do. Without that little button on the top ring of the therm., its going to abe a total bit(h to bleed. When you went through changing all of that stuff, there was soooo much air in their. There are many ways to bleed a cooling system, but the one with cracking the bleeder screw is probably the easiest, and close to the most eficient. The absolute best way is to hook it up t a flushing system, and do it that way. But it costs bucks. I dont understand why everyone here was tlaking about the sensor. That wouldnt have a thing to do with the car overheating. If the sensor wasnt cooperating with the usdm gauge cluster, there wouldnt be a correct reading from the get-go. He mentioned that the car would be at a good temp for a bit, and then rise after idling or driving. That is sympotmatic of air in the cooling system, causing the thermostat not opening. Glad to hear you got it fixed.
