Actually my coupe's roof opens all the way back to the last couple inches. Also the little wind deflection bar has the opposite affect for me. If I pull it down by hand, there's more wind buffeting and noise, so I'm not sure why yours seems to be the other way around. Also, it's supposed to stick above the roof line in order to redirect the air over the roof and not violently inside.
But yes, overall opening the roof is noisier but I assume it's simply air doing its thing as it hits an open area of the car. I'm sure the Mazda3's roof may be quieter than ours due to the shape of the windshield and roof overall compared to our cars, which helps the air deflect more quietly over the roof perhaps.
