At 84,000 miles my wife's new service advisor suggests the following:
Replace in-cabin micro air filter for a staggering $325.00
Fuel induction service
Cooling system fluid exchange
Complete brake fluid exchange
Total cost of this package is $749.95
This car has been religiously maintained and she has owned it since new. This is a lot of money and I'm trying to determine
which of these services is really a good idea--and should be performed. Top of the list of those I doubt is the in-cabin air filter.
Any thoughts?

Sounds looney to me. I would find another dealer or well-referenced independent mechanic.
In cabin air filter is bit of a pain to replace, but not $325 worth. My dealer wanted $85-90, and I opted to put in the $15 filter myself.
Lots of on-line videos show how.

The prices you stated all seem heavily inflated. What is the name of the dealership?

Find another dealership, or go to a independent shop that as an excellent reputation.

The blue coolant doesn't need to be changed until 105k, there is a service bulletin on that I think.

Brake fluid change should be about $100. Any more than that and you should do it yourself if you can. Its an easy process if you can get all 4 wheels off the ground and take them off, shouldn't take more than an hour or two for someone who is inexperienced. Keep the reservoir topped off so you don't let the master cylinder get air in it and you'll be fine.

In cabin micro filter is also fairly easy DIY in about an hour and a new filter costs like $25 I think.

Whatever fuel induction service is, skip it if the car is running fine.

If you haven't had the CVT fluid changed, do that.
