Suggested tire pressures on dirt/rocky roads

Unfortunately even a dual purpose vehicle is a compromise, but such is life. I anticipate doing some off road driving in the near future, I mean that's what I bought it for, likely very rocky and I'm wondering how far down I should set tire pressures. And how far on paved road I can drive with said tire pressures. I have purchased one of those little 12V air compressors, but I really don't want to use it too much. And how low can I go on the highway, I don't want to be a statistic like those Ford Explorers from some years back when they kept tipping over partly due to low tire pressure.
