Does my starter need to be grounded? The videos I've seen the starter only has the power cable to the battery then the signal output

It's grounded through the engine/trans

Factory location is from the intake manifold-->battery tray-->negative cable.

If it's not there, just buy a short switch to starter battery cable and bolt it to the block-->chassis somewhere

Okay another question. On the starter where the signal wire is connected there is a flat metal connector. Does that need to be connected as well? Videos I watch I don't see anyone connecting it....but I have a few extra connections and idk where they go. I wish I could post pictures to show y'all.

You'll have a lug for your main starter wire (4 gauge or similar) and that's your 12V constant. The spade terminal that you're referring to is your 12V switched connection that tells the starter to engage. So from the factory and at a minimum you'll have 2 wire's going to your starter.
