is there any fitment / rubbing issues for stance gtr / gtr pro coils on the s13 with 17x9 +20 wheels 235 40 r17 tires?

searched and found info on the stance coils and the wheels but nothing saying if there was any clearance issues or anything.

You should be okay...

mostly the clearance issues are with the front coilover springs rubbing the wheel, but I'd say you should be okay and it should clear. If there is indeed rubbing issues, it would be very very minimal, something a small 2-5mm spacer would fix.
