Have a 99 Infiniti I30 Limited. Do I have to remove the intake to get to the back 3 plugs? What is the best spark plug for this engine?

Welcome! No need to remove the plenum to get em. Just get a good extension and spark plug socket and you'll be good. I used NGK Iridium in my 98 Maxima and never had an issue. Good luck!

Do you have single over head cam or dual? Mine is dual.

The 99 I30 and 98 Maxima have the same exact VQ30DE.

Maxima hasn't had an SOHC engine option since 1994. The I has never had an SOHC engine.
