So my 03 qx4 has over 300000kms and the shocks and struts are shot and i found a KYB dealer here in dubai and they gave a very good price for both struts but my question is what should i consider changing while changing my struts?

Likely new top mounts. You'll want to change the rear too all four at once. Inspect your control arms, bushings, sway bars, cv while your there or prior to install.

Be careful with which top mounts you use. Lot's of reports here of after-market top mounts failing early. OEMs last, and a few others are known to be good.

Are KYBs good? All I keep seeing is that they promise to restore to factory ride. I'd like something a little stiffer. Or am I just wishing for something that doesn't exist?
